Ingredients
Spinach Filling
- 2 pounds fresh spinach or two 10-ounce packages frozen spinach (thawed)
- 8 ounces crumbled feta cheese
- 1 finely diced yellow onion
- 3–4 cloves minced garlic
- 1/2 cup finely chopped fresh dill
- 1/2 cup finely chopped fresh parsley
- 2 tablespoons finely chopped fresh mint (optional)
- 2 large eggs
- A generous pinch of freshly grated nutmeg
- Black pepper to taste
Phyllo and Fat Mixture
- 1/2 cup melted unsalted butter
- 1/4 cup good quality olive oil
- 1 pound package of phyllo pastry
Instructions
- Prepare the Spinach: For fresh spinach, wash it thoroughly, then wilt it in a large pot over medium heat until softened. Allow to cool, then squeeze out all excess liquid rigorously to prevent sogginess. For frozen spinach, thaw completely and squeeze out all the water before finely chopping it.
- Sauté the Aromatics: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely diced yellow onion and sauté for 5 to 7 minutes until it becomes soft and translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
- Assemble the Filling: Remove the skillet from heat. In a large mixing bowl, combine the chopped spinach with the sautéed onion and garlic. Add the crumbled feta cheese, chopped dill, parsley, mint (if using), eggs, freshly grated nutmeg, and black pepper to taste. Mix everything thoroughly until well combined.
- Prepare the Phyllo Pastry: Thaw the phyllo pastry overnight in the refrigerator and then let it come to room temperature before using. Combine the melted butter and olive oil in a bowl. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Layer and Fill: Unroll the phyllo pastry carefully, keeping unused sheets covered with a clean kitchen towel to prevent drying. Lay one sheet of phyllo in the baking dish and brush it generously with the butter-olive oil mixture. Repeat this process with 7 to 8 more sheets, layering and brushing each sheet. Spread the spinach filling evenly over the phyllo base. Then, layer the remaining phyllo sheets on top of the filling, continuing to brush each layer with the butter-oil mixture.
- Score and Bake: Lightly score the top layers of the assembled pastry into serving-sized portions to make cutting easier after baking. Brush the top liberally with the remaining butter-oil mixture. Bake in the preheated oven for 45 to 60 minutes or until the pastry is golden brown and crisp.
- Cool and Serve: Remove the pastry from the oven and allow it to rest for 10 to 15 minutes before cutting along the scored lines. Serve warm and enjoy the delightful combination of flaky pastry and flavorful spinach filling.
