Ingredients
Wrap Ingredients
- 2 large tortillas (regular or low-carb/high-protein)
Filling Ingredients
- 7 oz (about 200 grams) cooked chicken, chopped (rotisserie chicken recommended)
- 2 garlic cloves, minced or grated (adjust to taste)
- 2 tablespoons light mayonnaise
- 1 tablespoon light Greek yogurt or plain yogurt
- 2 teaspoons hot sauce (e.g., Frank’s)
- ¼ teaspoon salt
- 3 oz (about 90 grams) grated cheese (cheddar blend preferred)
- 1 green onion, chopped
Cooking
- Olive oil spray
Instructions
- Prepare the Chicken Mixture: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, Greek yogurt, hot sauce, and salt. Mix well until all ingredients are evenly incorporated.
- Assemble the Wrap: Lay a tortilla flat and on the lower third, sprinkle about 2 tablespoons of grated cheese. Add approximately ⅔ cup of the chicken mixture on top, then add another tablespoon of cheese and sprinkle chopped green onion over the filling.
- Fold and Roll: Fold the sides of the tortilla inward, then tightly roll it up starting from the bottom to encase the filling securely.
- Cook the Wraps: Heat a non-stick pan over medium-high heat and spray with olive oil. Place the wraps seam-side down in the pan and cook for 3 to 4 minutes on each side until the outside is crispy and golden brown. Cover the pan with a lid to help melt the cheese and heat the filling through evenly.
- Serve: Remove the wraps from the pan, slice in half if desired, and serve immediately for the best gooey texture.
Notes
- Covering the pan while cooking helps melt the cheese and warms the filling faster.
- The chicken filling can be prepared up to 3 days in advance and stored in the fridge.
- For a lighter option, reduce the amount of cheese, although the melty cheese is a key flavor component.
- You can cook the wraps in an air fryer at 375°F (190°C) for 6–8 minutes or bake them at 400°F (200°C) for 10–12 minutes, flipping once, but pan-frying or air frying yields a crispier texture.
- Leftover filling can be repurposed for toasties, quesadillas, or stuffed potatoes.
- Store cooked wraps in the refrigerator for up to 2 days; reheat in a skillet or air fryer to restore crispness. The wraps are not ideal for freezing, but the filling freezes well up to 1 month.
- Make chicken filling 2–3 days ahead and keep chilled until ready to use.
- Serve wraps with a crunchy salad, roasted vegetables, pickles, salsa, or chips for a complete meal.
