Description

Chocolate Banana Oatmeal Blender Muffins are a quick and easy recipe for naturally sweet, chocolatey muffins. Made by blending ripe bananas, creamy peanut butter, oats, and cocoa powder into a smooth batter, these muffins combine wholesome ingredients for a delicious, nutritious treat perfect for breakfast or snack time.

Ingredients

Wet Ingredients

  • 2 large ripe bananas
  • 2 whole eggs
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 2 teaspoon vanilla extract

Dry Ingredients

  • 3/4 cup old fashioned oats
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Topping

  • Chocolate chips, for sprinkling on top

Instructions

  1. Preheat the oven: Preheat your oven to 350º F and spray a 12-cup muffin tin with non-stick spray to prepare for baking.
  2. Add ingredients to blender: Place the bananas, eggs, peanut butter, oats, honey, cocoa powder, vanilla extract, baking powder, and salt into a high-powered blender.
  3. Blend the batter: Blend all ingredients until the mixture is smooth and well combined, stopping to scrape down the sides as needed to ensure even mixing.
  4. Fill the muffin tin: Scoop the batter into the prepared muffin tin cups, filling each about two-thirds full to allow room for rising.
  5. Add chocolate chip topping: Sprinkle chocolate chips evenly on top of each muffin batter portion for an extra chocolatey touch.
  6. Bake the muffins: Bake in the preheated oven for 13-15 minutes, or until a toothpick or tester inserted in the center comes out clean.
  7. Cool and serve: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Ensure bananas are very ripe for the best natural sweetness and flavor.
  • You can substitute peanut butter with almond or sunflower seed butter for a different nutty flavor.
  • For a sweeter muffin, add a little extra honey or sprinkle additional chocolate chips inside the batter.
  • Store muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These muffins freeze well for up to 2 months; thaw before serving.
