Description

These easy Corn Dog Bites are a delightful snack featuring juicy hot dog pieces embedded in a rich, golden cornbread batter, baked to perfect crispness. Ideal for game days, lunch boxes, or casual family meals, they offer a fun and tasty twist on the classic corndog in a convenient bite-sized form.

Ingredients

Cornbread Batter

  • 1 box (15 oz) cornbread mix (e.g., 365 brand)
  • 2 eggs (or as specified on cornbread mix box)
  • 1 cup milk (or as specified on cornbread mix box)
  • ⅓ cup vegetable oil (or as specified on cornbread mix box)

Hot Dogs

  • 6 hot dogs, cut into 1-inch pieces (approximately 36 pieces total)

For Serving

  • Ketchup
  • Mustard

Instructions

  1. Preheat Oven: Set your oven to 400°F (204°C) to prepare for baking the corndog bites.
  2. Prepare Cornbread Batter: In a mixing bowl, combine the cornbread mix with eggs, milk, and vegetable oil according to the package directions. Whisk thoroughly until smooth. Set the batter aside.
  3. Cut Hot Dogs: Slice each hot dog into 1-inch pieces, yielding about six pieces per hot dog for a total of approximately 36 pieces.
  4. Prepare Muffin Tin: Lightly spray a mini muffin pan with non-stick cooking spray or line with mini muffin liners to prevent sticking.
  5. Fill Muffin Cups: Spoon 1 to 1.5 tablespoons of cornbread batter into each mini muffin cup, filling about halfway.
  6. Add Hot Dog Pieces: Insert one piece of hot dog into the center of the batter in each cup, pushing it gently into the batter so it’s partially covered.
  7. Bake Bites: Place the muffin tin in the preheated oven and bake for 10-12 minutes, or until the cornbread is golden brown and fully cooked through.
  8. Serve: Remove from oven, let cool slightly, and serve warm with your choice of ketchup and mustard for dipping.

Notes

  • Use a light hand when adding hot dogs to ensure each bite holds together well.
  • Make sure to evenly space batter and hot dog pieces for consistent baking.
  • Mini muffin tin liners can be used for easier clean-up but are optional.
  • These corndog bites reheat well in the oven or toaster oven for a quick snack.
  • Feel free to customize with your favorite hot dog varieties or add a sprinkle of cheese on top before baking.
