Description
Juicy chicken thighs and potatoes marinated in fragrant curry spices and baked to crispy perfection. This easy, flavorful weeknight dinner combines bone-in chicken thighs with halved baby potatoes and onions, all infused with a tangy lemon and aromatic spice marinade.
Ingredients
Marinade
- 2 tbsp oil (canola oil, olive oil, etc)
- ¼ cup lemon/lime juice
- 2 tsp salt
- 1-2 tsp sugar (optional)
- 1 tsp ground coriander
- 1 tsp ground cumin
- ½ tsp chilli powder
- 1 tsp ground turmeric
- ½ tsp ground cardamom
- 3 garlic cloves, crushed
- 2 tsp crushed ginger
Main Ingredients
- 6 bone-in chicken thighs
- 500 g (1 lb) baby potatoes, halved
- 1 large onion, roughly chopped
Instructions
- Preheat the oven: Set your oven to 200°C (400°F) to get it ready for baking the chicken and potatoes.
- Mix marinade: In a bowl, combine oil, lemon or lime juice, salt, sugar (if using), ground coriander, cumin, chili powder, turmeric, cardamom, crushed garlic, and crushed ginger. Stir thoroughly to create a flavorful curry marinade.
- Coat chicken and potatoes: Place the chicken thighs, halved baby potatoes, and roughly chopped onion on a large baking sheet. Pour the prepared marinade over them, then massage and toss everything to evenly coat the chicken and potatoes with the sauce.
- Bake: Put the sheet pan into the preheated oven. Bake for 30 to 35 minutes, or until the chicken is cooked through with an internal temperature of 165°F (74°C) and the skin is crisp and caramelized. If the chicken skin browns too quickly due to the sugar caramelizing, loosely cover the pan with foil to prevent burning.
- Serve: Remove the pan from the oven. Serve the curried chicken thighs and potatoes hot, garnished with fresh lime wedges and coriander/cilantro, alongside your choice of side dishes.
Notes
- You can adjust the amount of chili powder based on your preferred spice level.
- For extra crispiness, broil the chicken for the last 2-3 minutes, watching carefully.
- Leftover chicken and potatoes reheat well and make excellent next-day meals.
- Using bone-in thighs ensures juicy, flavorful meat.
- If preferred, substitute baby potatoes with other small waxy potatoes.
