Description

Flaky Teriyaki Salmon Bowls are a quick and delicious meal featuring seared salmon glazed with a homemade teriyaki sauce, served over fluffy jasmine rice with creamy avocado, tender edamame, and a sprinkle of black sesame seeds and green onion. Perfect for busy weeknights or meal prep, this bowl offers balanced flavors and vibrant textures in under 30 minutes.

Ingredients

Salmon and Seasoning

  • 2 salmon fillets (skin removed, cut into bite-sized chunks)
  • Sea salt and pepper to taste

Teriyaki Sauce

  • 1 tablespoon olive oil or sesame oil
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 2 teaspoons grated fresh ginger
  • 2 garlic cloves, minced
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (cornstarch slurry)

Bowl Components

  • 1 cup cooked white jasmine or sushi rice
  • 1/2 avocado, thinly sliced
  • 1/2 cup cooked edamame (shelled)
  • 1 tablespoon black sesame seeds
  • 1 green onion, finely sliced
  • Lime wedges (optional)

Instructions

  1. Prepare Teriyaki Sauce: In a small saucepan over medium heat, whisk together soy sauce, honey, rice vinegar, ginger, and garlic. Let the mixture simmer gently for 2–3 minutes. Stir in the cornstarch slurry and whisk continuously until the sauce thickens to a glossy consistency. Remove from heat and set aside.
  2. Cook the Salmon: Pat the salmon chunks dry with a paper towel and season lightly with sea salt and pepper. Heat olive or sesame oil in a non-stick skillet over medium-high heat. Add the salmon pieces and sear each side for 2–3 minutes until they are browned and flaky inside.
  3. Glaze the Salmon: Pour the prepared teriyaki sauce over the salmon in the skillet. Toss gently to coat each piece evenly and cook for another minute until the salmon is sticky and well glazed with sauce.
  4. Assemble Bowls: Scoop the cooked jasmine rice into serving bowls. Arrange the sliced avocado and cooked edamame on one side of the bowl. Add the glazed salmon pieces on top or alongside.
  5. Finish and Serve: Drizzle any remaining teriyaki sauce over the assembled bowls. Sprinkle with black sesame seeds and sliced green onion. Add a squeeze of lime juice if desired, then serve immediately.

Notes

  • For a shortcut, you can use store-bought teriyaki sauce but reduce or omit added sweeteners to balance flavors.
  • Ensure salmon pieces are cut uniformly for even cooking.
  • Use low-sodium soy sauce to control salt content in the dish.
  • Freshly grated ginger and garlic enhance the sauce's freshness and aroma.
  • Shrimp or tofu can be substituted for salmon for alternative protein options.
