Description

This Creamy Baked Chicken recipe combines tender boneless chicken breasts with a rich, flavorful sauce made from sundried tomatoes, cream, Parmesan cheese, and spinach. Baked to perfection, this dish offers a comforting and easy meal option that pairs wonderfully with rice, quinoa, or vegetables.

Ingredients

Chicken

  • 4 boneless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 cup chopped sundried tomatoes (packed in oil)

Sauce

  • 1/2 cup heavy whipping cream
  • 1/2 cup chicken stock
  • 1 teaspoon garlic powder
  • 1 tablespoon all purpose flour
  • 1/2 cup grated Parmesan cheese (divided)

Additional

  • 1 cup finely chopped spinach (fresh or frozen thawed)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the chicken.
  2. Prepare Baking Dish and Chicken: Spray a 9 x 13 inch baking dish with nonstick spray. Place the boneless chicken breasts evenly in the dish.
  3. Season Chicken: Sprinkle the chicken breasts with onion powder, paprika, Italian seasoning, salt, and black pepper to season them thoroughly.
  4. Add Sundried Tomatoes: Scatter the chopped sundried tomatoes over the chicken breasts.
  5. Make Cream Sauce: In a large measuring cup or bowl, combine the heavy whipping cream, chicken stock, garlic powder, and all-purpose flour. Whisk well until the flour has fully dissolved and no lumps remain. Stir in 1/4 cup of the grated Parmesan cheese.
  6. Pour Sauce Over Chicken: Pour the creamy mixture evenly over and around the chicken and sundried tomatoes in the baking dish.
  7. Add Remaining Cheese: Sprinkle the remaining 1/4 cup Parmesan cheese over the top of the dish.
  8. Bake: Bake uncovered in the preheated oven for about 25 minutes, or until the sauce has thickened and the internal temperature of the chicken reaches 165°F.
  9. Add Spinach and Let Wilt: Remove the dish from the oven and stir the chopped spinach into the hot sauce. Let it sit for a few minutes until the spinach wilts and integrates with the sauce.
  10. Serve: Serve the creamy baked chicken with your choice of rice, cauliflower rice, quinoa, or steamed vegetables for a complete, satisfying meal.

Notes

  • Using sundried tomatoes packed in oil adds extra flavor and moisture to the dish.
  • Ensure chicken reaches an internal temperature of 165°F for safe consumption.
  • Frozen spinach should be fully thawed and excess water drained before adding.
  • This dish pairs well with a variety of sides like rice, quinoa, or steamed vegetables.
  • You can substitute chicken stock with vegetable broth for a milder taste.
