Ingredients
Main Ingredients
- 1 tsp olive oil
- 1 wheel Brie cheese (about 8 ounces)
- 1 tbsp honey
- 2 tbsp balsamic reduction (see notes)
- 1 peach, diced
- Crackers, baguette, or additional fruit for serving
Instructions
- Preheat the Grill: Preheat your grill to 450°F (232°C) to ensure it’s hot enough to melt the Brie and impart a smoky char without burning.
- Prepare the Brie: Lightly brush the rind of the Brie wheel with olive oil to prevent sticking and help develop a nice grilled crust.
- Grill the Brie First Side: Place the Brie on the grill over indirect heat, meaning not directly over the flame or heat source to avoid burning. Close the grill lid and cook for 2 minutes to start softening the cheese and add smoky flavor.
- Flip and Add Peaches: Carefully flip the Brie to grill the other side. Evenly distribute the diced peaches on top of the Brie wheel to warm and slightly caramelize as the cheese finishes melting. Close the lid and cook for an additional 2 to 3 minutes.
- Remove and Drizzle: Remove the Brie from the grill once it is warm, oozy, and the peaches are slightly softened. Drizzle honey and balsamic reduction over the top for sweetness and acidity that complements the cheese.
- Serve: Serve immediately with crackers, slices of baguette, and fresh fruit for dipping and pairing to enjoy the best melty cheese experience.
Notes
- Balsamic reduction can be made by simmering balsamic vinegar over low heat until it thickens into a syrupy consistency. Store leftover reduction refrigerated.
- Use indirect heat on the grill to gently melt the Brie without burning the rind.
- Peaches can be substituted with other stone fruits like nectarines or apricots depending on availability and preference.
- Serve promptly while the Brie is warm and gooey for the best texture and flavor.
