Description

This Hot Reuben Dip recipe captures all the delicious flavors of a classic Reuben sandwich—including corned beef, sauerkraut, and melty Swiss cheese—baked into a warm, cheesy dip. Perfect for parties or served with toasted rye bread for a comforting dinner treat.

Ingredients

Dip Ingredients

  • 4 ounces (113g) cream cheese, softened to room temperature
  • 6 tablespoons Thousand Island or Russian dressing, plus more for topping
  • 1 can (14.5 oz) sauerkraut, drained
  • 8 ounces corned beef, chopped
  • 8 ounces Swiss cheese, shredded, divided

Serving

  • Rye bread, sliced for dipping

Instructions

  1. Preheat the Oven: Preheat your oven to 400ºF (204ºC) to prepare for baking the dip.
  2. Combine Ingredients: In a large bowl, mix together the softened cream cheese, 6 tablespoons Thousand Island or Russian dressing, drained sauerkraut, chopped corned beef, and half of the shredded Swiss cheese (about 1 cup). Stir thoroughly until well combined to ensure even flavor distribution.
  3. Assemble the Dip: Transfer the mixture into a 9-10 inch cast iron skillet or an oven-safe baking dish. Drizzle a little more Thousand Island dressing on top if desired, then sprinkle the remaining shredded Swiss cheese evenly over the surface.
  4. Bake the Dip: Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and starting to brown. This creates a hot, melty dip perfect for scooping.
  5. Cool and Serve: Remove the dip from the oven and allow it to cool for about 10 minutes. Serve warm with sliced rye bread, crackers, or vegetables for dipping. The dip can also be served cold if preferred.
  6. Storage Tips: Store leftover dip covered in the refrigerator for up to 3 days. The dip also freezes well for up to 3 months. For best results, freeze the unbaked dip, thaw overnight in the refrigerator, and bake as instructed before serving.

Notes

  • For an authentic Reuben experience, use rye bread for dipping.
  • You can substitute Thousand Island dressing with Russian dressing based on your preference.
  • If freezing, freeze the dip unbaked and thaw overnight in the fridge before baking.
  • The dip can be served hot right out of the oven or enjoyed cold as a chilled appetizer.
  • Use a cast iron skillet for even heating and a nice presentation, but any oven-safe dish will work.
