Description

These Peanut Butter Energy Balls are a quick, nutritious, and delicious snack perfect for a boost of energy. Made with a blend of toasted seeds, smooth peanut butter, and flavored with cinnamon and cardamom, they are naturally sweetened with liquid allulose for a low-carb treat. Ready in just 10 minutes, they make an excellent grab-and-go snack or a healthy addition to your lunchbox.

Ingredients

Mixed Seeds

  • ½ cup mixed seeds (pumpkin seeds, sesame seeds, flaxseed, hemp seeds), 70g (measured before blending, don't overfill cup)

Wet Ingredients

  • ¼ cup peanut butter, smooth and runny, 65g
  • 1 tablespoon liquid allulose, 13g
  • water or milk of choice, 1 tablespoon (adjust as needed)
  • olive oil ½ teaspoon (optional, if peanut butter is not runny)

Spices and Flavorings

  • ½ teaspoon cinnamon
  • pinch sea salt
  • seeds of 2 cardamom pods crushed, or a pinch of powdered cardamom

Instructions

  1. Toast Seeds: Toast the mixed seeds in a large frying pan over medium heat until golden, about 2 minutes. Stir with a spatula and reduce heat to low once seeds start popping to prevent over-browning. Remove from heat and let cool.
  2. Process Seeds: Pulse the cooled seeds briefly in a food processor until you achieve a mixture of seed flour and larger pieces. Be careful not to over-blend.
  3. Combine Ingredients: In a small mixing bowl, stir together the processed seeds, peanut butter, liquid allulose, cinnamon, sea salt, and cardamom. Add water or milk of choice gradually to form a uniform dough. Add olive oil if the peanut butter isn't runny, and adjust liquid amounts as needed for texture.
  4. Form Balls: Roll the mixture into bite-sized balls, approximately 15 grams each. This recipe yields 10 energy balls. Optionally, roll the balls in toasted sesame seeds for extra texture and flavor.

Notes

  • Net carbs per energy ball are approximately 2.3g, with 10 balls total (1 ball per serving).
  • The amount of liquid (milk or water) affects the softness of the balls. Start with ½ tablespoon and adjust accordingly.
  • If the mixture is too soft, add almond flour, coconut flour, or protein powder to firm it up.
  • Outside the US, Wholesome liquid allulose is available via iHerb as of writing.
  • Store the energy balls in an airtight container in the fridge for up to 2 weeks.
