Description

This Keto Lemon Chicken Soup, inspired by the classic Greek Avgolemono, is a light and flavorful chicken soup featuring tender chicken, cauliflower rice, and a bright lemon-egg sauce that enriches the broth. Perfect for a low-carb, healthy meal packed with protein and fresh citrus notes.

Ingredients

Main Ingredients

  • 1 tbsp olive oil
  • 1/4 cup (40 g) chopped onion
  • Salt and pepper, to taste
  • 3 1/2 cups (828 ml) chicken broth
  • 1 bay leaf
  • 3 cups (420 g) chopped cooked chicken
  • 2 cups (320 g) frozen cauliflower rice
  • 1/2 cup (118 ml) lemon juice
  • 1 large egg

Instructions

  1. Sauté Onions: In a large saucepan over medium heat, warm the olive oil. Add the chopped onions and lightly season with salt and pepper. Cook, stirring occasionally, until the onions are translucent and fragrant.
  2. Add Broth and Simmer: Pour in the chicken broth and add the bay leaf. Bring the mixture to a gentle simmer.
  3. Add Chicken and Cauliflower Rice: Stir in the chopped cooked chicken and frozen cauliflower rice. Continue to simmer for about 10 minutes, until the cauliflower rice becomes tender but not mushy.
  4. Prepare Avgolemono Mixture: In a medium bowl, whisk together the lemon juice and the large egg until combined.
  5. Temper the Egg Mixture: Slowly ladle approximately 1 cup of hot broth from the soup into the lemon-egg mixture, whisking continuously to prevent curdling.
  6. Incorporate Egg Mixture: Gradually whisk the tempered lemon-egg mixture back into the saucepan. Stir gently to combine and heat through without boiling, which can cause the egg to curdle.
  7. Finish and Serve: Remove and discard the bay leaf. Adjust salt and pepper to taste. Serve the soup warm, garnished with lemon slices and chopped fresh parsley or green onions if desired.

Notes

  • Storage: Store in a covered container in the refrigerator for up to 5 days.
  • Reheating: Reheat gently either in the microwave or in a pan on the stove to avoid curdling the egg mixture.
  • Make sure to temper the egg-lemon mixture slowly to achieve the classic velvety texture of Avgolemono soup.
  • This soup is keto-friendly and low in net carbs, making it suitable for low-carb diets.
