Description

This Low Carb Keto Banana Bread is a moist and flavorful treat made with real ripe bananas while keeping the carb count low. Featuring almond flour, warm cinnamon, and crunchy walnuts, it’s perfect for those following a keto or low-carb diet who want to enjoy a classic comfort food without the sugar and high carbs.

Ingredients

Dry Ingredients

  • 1 ½ cups almond flour or ground almonds (150g)
  • ¼ cup granulated sweetener (50g, erythritol or sweetener of choice)
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder

Wet Ingredients

  • ½ cup mashed banana (2 small or 1 large, very ripe, 120g)
  • 3 large eggs
  • 2 tablespoons butter, melted (28g)

Add-ins

  • ¼ cup walnuts, crushed (30g) – plus extra for topping

Instructions

  1. Preheat Oven: Preheat your oven to 180 Celsius / 356 Fahrenheit.
  2. Mix Wet Ingredients: Using an electric mixer, beat the eggs together with the mashed banana and melted butter until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, stir together the almond flour, sweetener, cinnamon, and baking powder.
  4. Combine Mixtures: Add the dry ingredients to the wet ingredients bowl and mix until fully incorporated.
  5. Add Walnuts: Stir in the crushed walnuts, reserving some to sprinkle on top of the bread before baking.
  6. Prepare Loaf Tin: Line a small (7 x 3.5 inch / 1 lb) loaf tin with parchment paper and pour in the batter. Sprinkle the remaining walnuts evenly over the top.
  7. Bake: Bake for approximately 40 minutes or until a knife inserted into the center comes out clean. Check at 30 minutes; if the top is browning too quickly, cover loosely with aluminium foil to prevent burning.
  8. Cool and Serve: Allow the banana bread to cool completely in the tin before slicing and serving.

Notes

  • Each slice contains approximately 4.4g net carbs.
  • Walnuts are optional and can be substituted with other nuts or sugar-free chocolate chips.
  • Add a pinch of nutmeg for extra flavor if desired.
  • If using a regular 9 x 5 inch loaf tin, double the recipe and bake for 55-60 minutes.
  • Each slice weighs around 60 grams.
