Description

This Mediterranean Sun Dried Tomato Garlic Olive Oil Dip is a flavorful and aromatic appetizer that combines sun-dried tomatoes, garlic, herbs, and parmesan cheese. Simmered gently in olive oil to release deep flavors, this dip is perfect for serving with crusty bread or crackers and adds a delicious Mediterranean flair to any gathering.

Ingredients

Main Ingredients

  • 1 jar (8 oz) sun-dried tomatoes in oil
  • 1 to 2 grated garlic cloves
  • 1 small finely diced shallot
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked or sweet paprika
  • 1 to 2 tsp red chili flakes
  • 1/2 cup grated parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Infuse the oil: Drain the oil from the sun-dried tomatoes into a pot; you should have about 1/2 cup of oil. Roughly chop 1/3 cup of the sun-dried tomatoes from the jar and mix them into the oil. This will infuse the oil with extra tomato flavor right from the start.
  2. Simmer aromatics: Add the grated garlic, finely diced shallot, dried oregano, dried thyme, smoked or sweet paprika, and red chili flakes to the pot with the oil and chopped sun-dried tomatoes prepared in Step 1. Set the pot over low heat and let it simmer gently for about 5 minutes, just until the oil is warmed through and the aromatics have released their flavors. Using smoked paprika adds a deeper flavor, but sweet paprika works nicely too.
  3. Combine with parmesan: Place the grated parmesan cheese in a serving bowl. Carefully pour the hot flavored oil mixture over the cheese, allowing it to melt slightly and infuse the dip with rich taste.
  4. Garnish and serve: Top generously with fresh basil leaves for a bright, herbaceous finish. Serve immediately, ideally with your favorite bread for dipping.

Notes

  • Use smoked paprika for a richer, smokier flavor or sweet paprika for a milder taste.
  • Adjust red chili flakes according to desired spiciness.
  • This dip is best served fresh but can be stored covered in the refrigerator for 1-2 days.
  • Ideal pairing includes crusty bread, crostini, or raw vegetable sticks.
