Description

These Nachos with Beer Cheese Sauce offer a delicious twist on classic nachos with a creamy, homemade beer-infused cheese sauce. Crispy tortilla chips are layered with your choice of savory toppings like ground beef, jalapeños, tomatoes, olives, and red onions, then baked to perfection and finished with a rich, flavorful beer cheese sauce that adds a bold pub-style flair to this popular appetizer.

Ingredients

Nachos

  • 10 oz thick-cut tortilla chips
  • 1 cup cooked ground beef or shredded chicken (optional)
  • ½ cup sliced jalapeños
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives
  • ¼ cup diced red onion

Beer Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • ½ cup beer (lager or pale ale recommended)
  • 2 cups freshly shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp mustard powder
  • Salt to taste
  • Optional: pinch of cayenne pepper for heat

Instructions

  1. Prepare the Cheese Sauce Base: Melt the butter in a medium saucepan over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly, until the mixture is lightly golden and free of flour taste.
  2. Add Liquids: Slowly whisk in the whole milk followed by the beer. Continue whisking the mixture until it thickens slightly, about 3 to 4 minutes, forming a smooth base for the cheese sauce.
  3. Melt the Cheese: Reduce the heat to low. Gradually add the shredded sharp cheddar and Monterey Jack cheeses, stirring constantly to melt the cheese fully into a creamy, smooth sauce.
  4. Season the Sauce: Stir in garlic powder, onion powder, mustard powder, salt to taste, and a pinch of cayenne pepper if using to add heat. Remove the sauce from heat and keep warm until ready to use.
  5. Assemble the Nachos: Preheat your oven to 400°F (200°C). Spread the thick-cut tortilla chips evenly on a large baking sheet. If using, sprinkle the cooked ground beef or shredded chicken over the chips. Then add the sliced jalapeños, diced tomatoes, sliced black olives, and diced red onion evenly on top.
  6. Bake: Place the assembled nachos in the preheated oven and bake for 8 to 10 minutes, just until the toppings are heated through and the chips become lightly toasted.
  7. Finish and Serve: Remove the nachos from the oven and immediately drizzle the warm beer cheese sauce generously over the top. Serve the nachos hot and enjoy this flavorful appetizer with your choice of sides or dips.

Notes

  • You can substitute the beer with additional milk or a non-alcoholic beer for a milder flavor.
  • Use thick-cut tortilla chips for sturdier nachos that hold up well under the cheese sauce and toppings.
  • Adjust the amount of jalapeños and cayenne pepper to control the heat level according to your preference.
  • For a vegetarian version, omit the meat and consider adding beans or extra veggies.
  • Prepare the cheese sauce ahead of time and gently reheat before serving to save time.
