Description

This Pineapple Tequila Sunrise Shandy is a vibrant and refreshing cocktail combining the tropical sweetness of pineapple juice and grenadine with the bold kick of tequila and the light fizz of Mexican beer. Perfect for summer gatherings or casual sipping, this drink layers flavors beautifully and looks stunning garnished with pineapple slices and maraschino cherries.

Ingredients

Drink Mixture

  • 1 cup chilled pineapple juice
  • 1½ cups tequila blanco, chilled if possible
  • ½ cup chilled simple syrup
  • Mexican beer (we recommend Sol)
  • Grenadine (1-2 teaspoons per glass)

Garnishes

  • Pineapple slices
  • Maraschino cherries

Simple Syrup (make ahead)

  • 1 cup granulated sugar
  • 1 cup water

Instructions

  1. Prepare the Simple Syrup: In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water. Bring to a low boil, stirring continuously until the sugar dissolves completely. Remove from heat and let it cool completely. Refrigerate if making ahead.
  2. Mix the Base: In a pitcher, pour the chilled pineapple juice, chilled tequila blanco, and chilled simple syrup. Stir well to combine all the ingredients evenly.
  3. Fill Glasses with Ice: Fill your serving glasses to the top with ice cubes to keep the drink refreshingly cold.
  4. Pour Pineapple Mixture: Fill each glass about 3/4 full with the prepared pineapple, tequila, and syrup mixture.
  5. Top with Beer: Gently top off each glass with Mexican beer, leaving approximately a half-inch space at the top to prevent overflow.
  6. Add Grenadine: Slowly drizzle 1 to 2 teaspoons of grenadine per glass over the back of a spoon or down the side to create a layered sunrise effect with the grenadine settling at the bottom.
  7. Garnish and Serve: Add a pineapple slice and a maraschino cherry to each glass for an appealing presentation. Serve immediately and enjoy.

Notes

  • Simple syrup can be made in advance and stored in the refrigerator for up to two weeks.
  • Chilling the tequila and pineapple juice enhances the drink’s refreshing qualities.
  • Use a light Mexican beer like Sol for best flavor and fizz balance.
  • Adjust grenadine amount to preference for sweetness and color intensity.
  • This recipe yields approximately 6 servings depending on glass size.
