Ingredients
Sushi Rice:
- 4 cups water
- 2 cups uncooked white rice
- 1/2 cup seasoned rice vinegar
- 1 teaspoon white sugar
- 1 teaspoon salt
Rainbow Roll:
- 8 ounces krab meat sticks or genuine cooked crab
- 4 sheets nori dry seaweed
- 1 English cucumber, peeled, de-seeded, and cut into thin strips
- 6 ounces sushi grade salmon
- 6 ounces sushi grade tuna
- 2 avocados, pitted and thinly sliced (divided)
- Toasted white sesame seeds
To Serve:
- Pickled ginger for garnish
- Low sodium soy sauce
- Wasabi paste
Instructions
- Prepare the Sushi Rice: In a large pot, combine 4 cups of water and 2 cups of uncooked white rice. Bring to a boil over high heat, then reduce the heat to medium-low, cover, and simmer for 20-22 minutes until the rice is soft and all water is absorbed.
- Season the Rice: Carefully transfer the cooked rice into a large bowl. Mix together 1/2 cup seasoned rice vinegar, 1 teaspoon white sugar, and 1 teaspoon salt until dissolved. Gently fold this mixture into the rice using a rice paddle or large spoon, cutting it in evenly without over-stirring. Allow the rice to cool for 20-30 minutes before use.
- Prepare Rolling Surface: Wrap your sushi mat in plastic wrap to prevent rice from sticking during rolling.
- Assemble the Roll: Spread a thin, even layer of sushi rice over a sheet of nori placed on a clean surface, rice side down on the rolling mat.
- Add Fillings: Reserve half the avocado slices for topping. Place krab meat sticks down the middle of the nori sheet, followed by some sliced avocado and cucumber strips.
- Roll the Sushi: Use the sushi mat to roll the nori tightly over the fillings, forming a compact log.
- Prepare the Toppings: Thinly slice sushi-grade salmon and tuna. Drape the salmon, tuna, and the reserved avocado slices in an alternating pattern along the top of each roll.
- Press and Garnish: Gently press the toppings onto the rolls using the sushi mat. Sprinkle toasted white sesame seeds over the top for added flavor and texture.
- Slice and Serve: Using a sharp knife dipped in cool water and wiped clean between cuts, slice each roll into 6 pieces starting from the middle and working outward. Serve with pickled ginger, low sodium soy sauce, and wasabi paste.
Notes
- Use sushi-grade fish to ensure freshness and safety when consuming raw fish.
- Wrap the sushi mat in plastic wrap before rolling to prevent sticking and make cleanup easier.
- Dipping the knife in cool water between slices helps create clean cuts without crushing the roll.
- Feel free to customize fillings with other favorite ingredients such as cooked shrimp or tempura veggies.
- Sushi rice seasoning should be gently folded in to maintain the rice’s texture.
