Description

This elegant Savory Yule Log with Seafood Flavors combines fresh crab meat, smoked salmon, and creamy mascarpone in a light, fluffy baked terrine. Perfect for festive occasions, this French-inspired gluten-free dish is beautifully decorated with prawns, lemon, and fresh herbs, making it a chic centerpiece for any meal.

Ingredients

Seafood

  • 200g of crab meat (fresh or well-drained canned)
  • 150g of smoked salmon (cut into small pieces)
  • 6 peeled prawns (for decoration)

Dairy & Eggs

  • 250g of fresh cheese (such as mascarpone or Philadelphia)
  • 3 eggs (separated into yolks and whites)
  • 10 cl of liquid cream

Flavorings & Seasonings

  • 1 tablespoon of mustard
  • 1 yellow lemon (for decoration and a little zest in the preparation)
  • 1 tablespoon of chopped chives (or dill, according to preference)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to ensure it reaches the right temperature for baking the log evenly.
  2. Separate Eggs: Carefully separate the egg whites from the yolks into two separate bowls, ensuring no yolk contaminates the whites to achieve proper volume when whisking.
  3. Mix Egg Yolks and Cream Cheese: In the bowl with egg yolks, add the fresh cheese, mustard, and liquid cream. Whisk the ingredients together until you obtain a smooth and homogenous mixture, which will form the base of your terrine.
  4. Whisk Egg Whites: Add a pinch of salt to the egg whites and whisk them until stiff peaks form. This aerates the mixture and will help make the log light and fluffy.
  5. Fold Egg Whites: Gently fold the stiff egg whites into the yolk and cheese mixture using a spatula. Stir carefully to maintain the airiness of the egg whites without deflating them.
  6. Add Seafood: Incorporate the crab meat and pieces of smoked salmon into the batter. Stir gently to evenly distribute the seafood without breaking it up too much.
  7. Prepare Mold: Line a log or rectangular mold with parchment paper for easy removal. Pour the prepared mixture into the mold and smooth the top with a spatula for an even finish.
  8. Bake: Place the mold in the preheated oven and bake for 30 minutes, or until the log is golden brown on top and firm to the touch, indicating it is fully cooked.
  9. Cool and Unmold: Allow the yule log to cool completely in the mold to set properly before carefully unmolding it onto a serving plate.
  10. Decorate and Serve: Garnish the top of the log with the peeled prawns, a few lemon wedges, and sprinkle with fresh chopped chives or dill to add color and fresh aroma.

Notes

  • For best results, use fresh crab meat, but canned crab is suitable if thoroughly drained.
  • This recipe makes an elegant centerpiece ideal for parties and special occasions due to its presentation.
  • Ensure egg whites are whipped to stiff peaks for proper texture and rise.
  • Use parchment paper in the mold to prevent sticking and ease unmolding.
  • Adjust seasoning to taste, especially the salt and pepper, depending on the saltiness of the smoked salmon.
