Description

This shrimp cocktail recipe offers a luxurious and refreshing appetizer featuring perfectly poached jumbo shrimp served chilled with a tangy, zesty cocktail sauce enhanced with horseradish and a hint of apple sauce.

Ingredients

Shrimp

  • 1 lemon, halved
  • 2 pounds jumbo shrimp, shells on

Cocktail Sauce

  • 1 cup ketchup
  • ¼ cup prepared horseradish
  • 2 tablespoons Worcestershire sauce
  • 1½ teaspoon Dijon mustard
  • ½ teaspoon hot sauce (such as Tabasco)
  • 2 tablespoons apple sauce
  • 1 teaspoon fresh lemon zest (from 1 lemon)

For Serving

  • Lemon wedges (optional)

Instructions

  1. Prepare the poaching liquid: Fill a large pot with water and squeeze the juice from the lemon halves into it. Add the lemon halves to the pot and bring to a boil over high heat.
  2. Poach the shrimp: Reduce the heat to a low simmer and add the jumbo shrimp to the water. Cover the pot and poach the shrimp for about 4 minutes, or until they turn bright pink and become firm to the touch.
  3. Cool and peel shrimp: Drain the shrimp and allow them to cool to room temperature. Peel off the shells and devein the shrimp carefully. Place the shrimp in the refrigerator and chill for at least two hours before serving to enhance flavor and texture.
  4. Make the cocktail sauce: In a medium bowl, combine the ketchup, prepared horseradish, Worcestershire sauce, Dijon mustard, hot sauce, apple sauce, and fresh lemon zest. Mix thoroughly until the sauce is smooth and well blended.
  5. Serve: Arrange the chilled shrimp over a bed of ice on a serving platter. Offer lemon wedges on the side if desired, along with the cocktail sauce for dipping.

Notes

  • Use fresh lemon halves in the poaching liquid to infuse subtle citrus flavor into the shrimp.
  • Chilling the shrimp for at least two hours before serving ensures they are cold and firm, perfect for shrimp cocktail.
  • You can adjust the hot sauce level in the cocktail sauce depending on your preferred spice tolerance.
  • If fresh shrimp are not available, frozen jumbo shrimp can be used; just thaw completely before poaching.
  • Serve immediately after assembling for optimal freshness and taste.
