Description

These Southwest grilled red potatoes are a perfect blend of savory, smoky, and spicy flavors. Tender on the inside with a crispy, charred crust, they make an irresistible side dish for any summer barbecue or casual meal.

Ingredients

Potatoes

  • 1 lb small red potatoes

Marinade

  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 tbsp fresh rosemary, minced
  • 1 tsp kosher salt
  • 1 tsp red pepper flakes
  • 1/2 tsp chili powder

Instructions

  1. Boil the Potatoes: Cook the small red potatoes in boiling water for 10-12 minutes until just tender. Drain them and allow to cool enough so they can be handled comfortably.
  2. Prepare the Marinade: In a bowl, mix together the vegetable oil, minced garlic, 1 tablespoon of fresh rosemary, kosher salt, red pepper flakes, and chili powder. This mixture will infuse the potatoes with bold Southwest flavors.
  3. Marinate the Potatoes: Transfer the cooled potatoes to a sealable bag or bowl and pour the marinade over them. Toss well to coat all the potatoes evenly. Seal the bag or cover the bowl and let them rest for 30 minutes to absorb the flavors.
  4. Preheat the Grill: Heat your grill or smoker to a temperature between 425-450°F. This high heat will help create a crispy, charred outside.
  5. Skewer the Potatoes: Thread the marinated potatoes onto skewers. If using wooden skewers, soak them in cold water for 5 minutes beforehand to prevent burning. Metal skewers are a good alternative but be cautious as they get hot.
  6. Grill the Potatoes: Place the skewered potatoes on the grill rack and cook for 25-30 minutes, turning frequently to ensure even cooking and charring. The potatoes should become very soft inside with a nicely charred exterior.
  7. Serve: Remove the skewers from the grill and sprinkle the remaining fresh rosemary on top before serving. Enjoy these smoky and spicy Southwest grilled potatoes hot off the grill.

Notes

  • Soaking wooden skewers prior to grilling prevents them from burning.
  • Turning the potatoes frequently helps achieve an even char and prevents them from sticking.
  • This recipe pairs well with grilled meats or as a flavorful vegetarian side dish.
  • Adjust the amount of red pepper flakes and chili powder to your preferred spice level.
  • If you don’t have a grill, you can use a grill pan on the stovetop or broil in the oven, though flavor and texture may vary slightly.
