Description

Stuffed phyllo cups filled with a delightful blend of sautéed spinach, crumbled feta cheese, and tangy sundried tomatoes. These bite-sized Mediterranean appetizers are crispy, flavorful, and elegantly perfect for parties or brunches.

Ingredients

Filling

  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup sundried tomatoes, chopped
  • 1 small garlic clove, minced
  • 1 tbsp olive oil
  • Salt and black pepper, to taste

Phyllo Cups

  • 8–10 mini phyllo tart shells or cups
  • 1 egg, lightly beaten (optional, for brushing edges)

Garnish

  • Fresh parsley or dill, for garnish
  • Drizzle of olive oil, optional

Instructions

  1. Heat olive oil: Heat olive oil in a skillet over medium heat to prepare the base for the filling.
  2. Sauté garlic: Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Cook spinach: Add the chopped spinach and cook until wilted, approximately 2 to 3 minutes, stirring occasionally.
  4. Combine filling ingredients: Remove the skillet from heat and stir in crumbled feta and chopped sundried tomatoes. Season the mixture with salt and black pepper to taste.
  5. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the phyllo cups.
  6. Fill phyllo cups: Spoon the spinach, feta, and sundried tomato mixture evenly into each phyllo cup.
  7. Optional egg wash: Brush the edges of the phyllo cups with the lightly beaten egg to help achieve a golden and glossy finish upon baking.
  8. Bake: Place the filled phyllo cups on a baking sheet and bake for 8–10 minutes until the cups are crisp and the filling is warmed through.
  9. Garnish: Remove from oven and garnish each cup with fresh parsley or dill for a fresh, herbal note.
  10. Serve: Serve the stuffed phyllo cups warm or at room temperature as an elegant and flavorful appetizer.

Notes

  • Use oil-packed sundried tomatoes for a richer, more intense flavor.
  • Add a pinch of chili flakes to the filling for a hint of heat if desired.
  • The phyllo cups can be assembled ahead of time and baked just before serving for convenience.
  • These appetizers are ideal for parties, brunches, and Mediterranean-inspired gatherings.
