Ingredients
For the Chicken Meatballs:
- 1 lb (450g) ground chicken
- ½ cup panko breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp chopped fresh cilantro
- 2 green onions, finely chopped
- 1 tbsp vegetable oil (for frying)
For the Coconut Curry Sauce:
- 1 tbsp vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tbsp red curry paste
- 1 tsp turmeric powder
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tsp lime juice
- ½ cup cherry tomatoes, halved
- ½ cup bell pepper, thinly sliced
- ½ cup carrots, julienned
- 1 tbsp fresh basil, chopped (for garnish)
- 1 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Meatballs: In a large mixing bowl, combine ground chicken, panko breadcrumbs, egg, garlic, ginger, soy sauce, fish sauce, salt, black pepper, cilantro, and green onions. Mix well but do not overmix to avoid dense meatballs. Shape the mixture into small 1-inch meatballs and place them on a plate. Heat 1 tbsp vegetable oil in a large skillet over medium heat. Sear the meatballs in a single layer for 3-4 minutes per side until golden brown but not fully cooked. Remove and set aside.
- Make the Coconut Curry Sauce: Using the same skillet, add another tablespoon of vegetable oil. Sauté the chopped onion for 2-3 minutes until translucent. Add garlic and ginger and cook for one minute until fragrant. Stir in red curry paste and turmeric powder, cooking for another minute to bloom the spices.
- Simmer the Sauce: Pour in the coconut milk and chicken broth, stirring to combine. Add fish sauce, brown sugar, and lime juice to balance flavors. Toss in cherry tomatoes, bell pepper, and carrots. Let the sauce simmer gently for about 5 minutes, allowing vegetables to soften.
- Finish Cooking the Meatballs: Return the seared meatballs to the skillet, nestling them into the coconut curry sauce. Cover and simmer on low heat for 10 minutes or until meatballs are cooked through and flavors meld.
- Serve and Garnish: Garnish with chopped fresh basil and cilantro before serving. This dish pairs beautifully with steamed jasmine rice or rice noodles.
Notes
- Be careful not to overmix meatball ingredients to keep them tender.
- Searing meatballs first adds a flavorful crust and helps them hold shape during simmering.
- You can adjust the spice level by adding more or less red curry paste.
- Vegetables can be swapped or supplemented based on preference and seasonality.
- For a gluten-free option, substitute panko breadcrumbs with gluten-free breadcrumbs.
