Description

Discover the secret to the best quesadilla with this quick and easy recipe featuring a creamy blend of cheddar cheese, green chiles, and savory spices, all perfectly toasted in a skillet. Ideal for a satisfying snack or light meal ready in just 15 minutes.

Ingredients

Tortillas

  • 4 flour tortillas (9 inches)

Filling

  • 3 tbsp sour cream
  • 1 cup cheddar cheese (shredded)
  • 1 4 oz can green chiles (drained well and dried on a paper towel)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp granulated garlic
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika

Instructions

  1. Prepare the chiles: Open the can of green chiles and drain the liquid completely. Pour the chiles onto a paper towel and pat dry thoroughly to remove any excess moisture, ensuring the filling won’t be watery.
  2. Mix the filling: In a bowl, combine the drained and dried chiles with the sour cream, shredded cheddar cheese, salt, black pepper, granulated garlic, cumin, and smoked paprika. Stir well until the mixture becomes thick and spreadable.
  3. Assemble the quesadillas: Spread half of the filling mixture evenly onto one tortilla and the remaining half onto another tortilla, making two total quesadillas ready for cooking.
  4. Cook on stovetop: Spray a nonstick skillet or pan lightly with nonstick spray and heat over medium heat. Place one filled tortilla in the skillet and cook until the bottom is toasted and golden brown, and the filling has melted, about 3-4 minutes. Flip carefully and cook the other side until toasted. Repeat with the second quesadilla.
  5. Serve: Remove the quesadillas from the skillet, slice into wedges, and serve immediately. Enjoy your perfectly toasted, cheesy quesadillas!

Notes

  • Ensure the green chiles are dried well to avoid soggy quesadillas.
  • Use nonstick spray or a light brush of oil to prevent sticking when cooking.
  • Adjust the spice levels by adding more or less cumin and smoked paprika to your taste.
  • For a gluten-free version, substitute flour tortillas with gluten-free tortillas.
  • Serve with salsa or guacamole for extra flavor.
