If you're looking for a dessert that combines all the nostalgic flavors of a classic cookie with the ease of a simple one-pan treat, the Monster Cookie Bars Recipe is your new best friend. These bars are thick, chewy, and bursting with peanut butter, chocolate chips, and a colorful crunch of M&Ms, creating a joyful bite every single time. Forget about measuring out individual cookies or waiting hours to chill dough—this recipe comes together quickly and bakes evenly in a 9×13 pan, delivering a crowd-pleaser for any occasion.

Ingredients You'll Need

A white bowl filled with light brown cookie dough as the base layer, topped unevenly with three different types of chocolate candies in distinct sections: bright, multicolored candy-coated chocolates on the left side adding vibrant spots of red, blue, green, yellow, and orange; medium-sized dark brown chocolate chunks arranged in the middle; and small, dark chocolate chips piled on the right center. The bowl sits on a white marbled surface, and the inside of the bowl has some dough stuck to the sides. photo taken with an iphone --ar 4:5 --v 7

The magic of this Monster Cookie Bars Recipe lies in its simple yet essential ingredients. Each item brings its own special touch to the texture, flavor, or appearance of these bars—from the creamy peanut butter that adds richness, to the rolled oats that provide a hearty chew, and the vibrant M&Ms that make every bite playful and fun.

  • Unsalted butter (14 tablespoons): Using room temperature butter ensures a perfectly creamy batter without melting the mix prematurely.
  • Creamy peanut butter (½ cup): This adds a rich, nutty flavor that’s signature to monster cookies and keeps the bars moist.
  • Light brown sugar (½ cup, packed): Gives a mild caramel note and helps keep the bars soft and chewy.
  • Dark brown sugar (½ cup, packed): Adds extra depth with molasses undertones, balancing sweetness beautifully.
  • Granulated sugar (½ cup): Provides structure and just enough sweetness to complement the other sugars.
  • Large eggs (2) and egg yolks (2): These enrich the dough, adding tenderness and helping bind everything together smoothly.
  • Vanilla extract (1 tablespoon): A splash of vanilla brightens flavors and melds all the ingredients perfectly.
  • All-purpose flour (2 cups): The backbone of the bars, it gives structure and the right bite.
  • Rolled oats (1 ¾ cups): Old-fashioned oats create a chewy texture that’s essential for that monster cookie feel.
  • Semi-sweet chocolate chips (½ cup): Classic melty sweet bites scattered throughout the bars are irresistible.
  • Chopped chocolate bar (½ cup): Adds rich chocolate chunks with a slightly different texture from chips.
  • Mini M&Ms (⅓ cup) and regular M&Ms (⅓ cup): The colorful candy melts bring fun, crunch, and bursts of milk chocolate in each bar.
  • Baking soda (1 teaspoon): Helps the bars rise slightly so they’re thick but tender.
  • Fine sea salt (1 teaspoon): Balances sweetness and enhances all the flavors.

How to Make Monster Cookie Bars Recipe

Step 1: Prepare Your Pan and Oven

Start by lining a 9×13 baking pan with parchment paper or greasing it thoroughly with butter or nonstick spray. Preheat your oven to 350°F (180°C) so it’s ready to bake as soon as your batter is mixed.

Step 2: Cream Butter, Peanut Butter, and Sugars

In a large mixing bowl, beat together the softened butter, creamy peanut butter, light and dark brown sugars, and granulated sugar until the mixture becomes light, fluffy, and homogenous. This step is key to building the right texture for your monster cookie bars, creating a rich base that will bake beautifully.

Step 3: Add Eggs and Vanilla

Mix in the two large eggs, two egg yolks, and vanilla extract, beating until everything is fully incorporated. The eggs add moisture and richness, while vanilla enhances the overall flavor profile.

Step 4: Fold in Dry Ingredients and Mix-Ins

Gently fold in the all-purpose flour, rolled oats, baking soda, and fine sea salt, followed by semi-sweet chocolate chips, chopped chocolate chunks, and both mini and regular M&Ms. Be careful not to overmix here—just combine until the dry ingredients are fully incorporated and you have a thick, chunky dough.

Step 5: Spread Batter and Bake

Evenly spread the dough into your prepared baking pan, smoothing the top with a spatula. For extra indulgence, sprinkle additional chocolate chips, chopped chocolate, and M&Ms on top. Bake for about 25-35 minutes until the surface turns golden brown and a toothpick inserted in the center comes out with just a few moist crumbs.

Step 6: Cool and Cut

Allow the bars to cool completely in the pan set on a wire rack. This cooling step is crucial to let the bars set so they cut cleanly and hold their shape—a perfect balance of chewy and soft.

The image shows a group of square cookie bars stacked unevenly on light brown parchment paper over a white marbled surface. The bars have a golden-brown color with a soft and slightly crumbly texture. Scattered on top and inside the bars are colorful round candy pieces in red, green, blue, orange, and yellow, along with melted dark brown chocolate chunks. Some candy pieces are cracked, revealing their inner chocolate, and a few small crumbs and candies lie around the edges on the surface. Garnishes

While these bars are delicious as-is, you can add a scoop of vanilla ice cream or a drizzle of caramel sauce to turn them into a decadent dessert treat. A light dusting of powdered sugar also makes for a pretty finishing touch, especially for parties.

Side Dishes

Monster cookie bars pair wonderfully with cold milk, a hot cup of coffee, or even a frothy latte. Their rich and sweet profile perfectly complements these beverages and makes snack time extra comforting and indulgent.

Creative Ways to Present

For a fun twist, cut the cookie bars into bite-sized squares and serve them on a colorful platter alongside fresh fruit or nuts for a balanced snack. You could also layer the bars with whipped cream and fresh berries to craft a quick dessert trifle everyone will rave about!

Make Ahead and Storage

Storing Leftovers

Keep your Monster Cookie Bars Recipe leftovers in an airtight container at room temperature for up to 5 days. This keeps them chewy and moist, maintaining their signature texture without drying out.

Freezing

If you want to keep these bars even longer, wrap them tightly in plastic wrap and then foil before freezing. They freeze beautifully for up to 3 months. When you’re ready to enjoy, simply thaw them overnight in the fridge.

Reheating

To bring some warmth back into your bars, microwave a single piece for about 15 seconds or warm a few bars in an oven set to 325°F for 5-7 minutes. Warmed bars are wonderfully gooey and almost like fresh from the oven!

FAQs

Can I substitute the peanut butter?

Yes! While peanut butter provides that classic monster cookie flavor, you can use almond butter or sunflower seed butter if you have allergies or prefer a different taste. Keep in mind that it may slightly change the texture and flavor.

Do I have to use both mini and regular M&Ms?

Not necessarily—using both sizes adds a fun texture and visual variety, but you can use just one size if you prefer. Feel free to swap M&Ms for another candy like Reese’s Pieces for a tasty twist.

Is it necessary to use both brown and granulated sugars?

Yes, the combination creates the perfect balance of moisture, chewiness, and sweetness. Brown sugar adds moisture and depth of flavor due to its molasses content, while granulated sugar helps with structure and slight crispness.

Can I make these bars gluten-free?

Absolutely! Substitute the all-purpose flour with a gluten-free flour blend and make sure to use certified gluten-free oats. This swap should maintain the texture and taste without any issues.

What’s the best way to cut these bars?

Wait until they have completely cooled, then use a sharp knife for clean, crisp edges. For easier cutting, refrigerate the pan for 30 minutes before slicing if they still feel too soft.

Final Thoughts

There’s nothing quite like biting into a warm, chewy square of these Monster Cookie Bars Recipe delights that instantly brings back happy memories and puts a smile on your face. Easy to make and impossible not to love, these bars have quickly become one of my favorite go-to desserts. I can’t wait for you to try them and see how they bring chewy, chocolatey, peanut-buttery joy to your kitchen!

Ingredients

Wet Ingredients

  • 14 tablespoons unsalted butter, room temperature (196 g)
  • ½ cup creamy peanut butter (132 g)
  • 2 large eggs, room temperature (100 g)
  • 2 large egg yolks, room temperature (36 g)
  • 1 tablespoon vanilla extract

Sugars

  • ½ cup light brown sugar, packed (100 g)
  • ½ cup dark brown sugar, packed (100 g)
  • ½ cup granulated sugar (100 g)

Dry Ingredients

  • 2 cups all-purpose flour (260 g)
  • 1 ¾ cup rolled oats (old-fashioned oats) (180 g)
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt

Mix-ins

  • ½ cup semi-sweet chocolate chips (85 g)
  • ½ cup chopped chocolate bar (78 g)
  • ⅓ cup mini M&Ms (75 g)
  • ⅓ cup regular M&Ms (78 g)

Instructions

  1. Prepare Pan and Oven: Line a 9×13 baking pan with parchment paper or grease it with nonstick spray or butter. Preheat your oven to 350°F (180°C) to ensure it's ready when your dough is prepared.
  2. Cream Butter, Peanut Butter, and Sugars: In a mixing bowl, beat together the room temperature unsalted butter, creamy peanut butter, light brown sugar, dark brown sugar, and granulated sugar until the mixture is light and fluffy, which usually takes about 2-3 minutes using an electric mixer.
  3. Add Eggs and Vanilla: Mix in the eggs, egg yolks, and vanilla extract until well incorporated, creating a smooth batter that will bind the dry ingredients.
  4. Fold in Dry Ingredients and Mix-ins: Gently fold in the all-purpose flour, rolled oats, baking soda, fine sea salt, semi-sweet chocolate chips, chopped chocolate bar, and both mini and regular M&Ms until just combined. Avoid overmixing to keep the bars tender.
  5. Spread Dough in Pan: Evenly spread the cookie dough into the prepared baking pan, smoothing the top. You can optionally sprinkle extra chocolate chips, chopped chocolate, and M&Ms on top for added texture and appearance.
  6. Bake: Place the pan in the preheated oven and bake for 25 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out just barely moist. This ensures the bars stay chewy and not overbaked.
  7. Cool and Serve: Remove the pan from the oven and let the cookie bars cool completely on a wire rack. Once cooled, cut into 24 bars and enjoy these tasty monster cookie bars.

Notes

  • For best results, measure the flour by spooning it into the measuring cup and leveling it off instead of scooping directly to avoid packing.
  • You can substitute the chopped chocolate bar with your favorite chocolate chunks or chips.
  • Store leftover bars in an airtight container at room temperature for up to 5 days or freeze for longer storage.
  • Do not overbake to maintain the chewy texture; bars will firm up as they cool.
  • If desired, toppings such as extra chocolate chips or M&Ms can be added to the top before baking for a more colorful presentation.
